12 Egg Bite meal prep (we eat 2 each) + variations.

EGG BITES- hash brown, paprika, pepper, egg, yellow onion, arugula.

These suckers are sooo easy and have it all! I’ve been winging it, but it’s been working so, here!

  • SHOPPING LIST

  • 12 muffin tin - if not non stick, grease your pan.

  • Oil of choice - Olive, avocado, coconut oil, macadamia, butter, bacon grease are a few options.

  • 6 - 8 eggs

  • Milk (optional - will need more eggs without a milk option)

  • Bacon to taste or protein of choice. I used 4 slices for bacon and 0.5lb when I used sausage.

  • Veg of choice - I used arugula and onion.

  • Hash browns- a big bag of raw frozen hashbrowns for multipule batches is nice, but you only need a small amount.

  • Spice options - I used Paprika and pepper.

Prep

  • Oven to broil

  • Hashbrown layer the bottom of each bite. If frozen, thaw a little. Slam em in the oven until they have a nice crisp brown. Like I said, I’ve been winging it. So, check as you see fit. 5 minutes or so? Don’t burn the place down.

  • Oven to 350

  • Prepare scramble mix - eggs, 1 spoon of milk per egg in big bowl and whisk and spices. Paprika (couple good shakes) and pepper to taste!

  • Bacon or protein cooks to mostly done on the burner. Place on paper towel to collect extra fat.

  • Sautee 1/2 onion chopped, handful of arugula chopped or veg of choice.

  • Mix all your desired ingredients into big bowl.

  • Pour into tin and top with nutritional yeast or cheese.

  • Pop into the oven, check at 10 minutes. Cook time will vary oven to oven.

  • Pull out when browning on top and look done to your liking.

  • Eat one to make sure its good and store the rest in the fridge.

  • When ready, pop in the microwave for 1.5-2 minutes

OTHER OPTIONS

Breakfast sausage, cold cut turkey, veggie burger, thai veg patty from trader joes.

Spice ideas. Salt, garlic powder, chives, nutritional yeast and dill in various iterations.

Veg ideas - shaved brussels , chopped bell pepper. sweet potato, spinach, kale.

Raw veg or cooked first option depending on the veg.

Cheese? grated Parmesan? feta?
