Seared bread breakfast sando

Ingredients: 2 eggs, 2 slices of bread, avocado, greek yogurt whipped cream cheese.

Heat your choice of oil in a pan.

(my options: avocado oil, olive oil, macadamia oil,butter)

Know the smoke point.

Once the oil starts to move on its own, cover the bottom of the pan and drop the bread in. I used a 9 grain whole wheat. Press it down firm and don’t move it until you suspect crisp. Don’t rush it.

I scrambled two eggs (however you want) in macadamia oil.

Cooked the other side of the toast.

Once both side were brown I slathered one in the cream cheese the other in avocado, slapped the eggs on. Top or cook with seasonings of your choice and or top with sauce!

Paprika, sea salt, pepper or chives are personal favs. Topped with our local horsetooth hot sauce.
